The Perfect Recipe for Celebration

Martha’s recipe became legendary among her friends and family, and she was often asked to share it. Here’s a glimpse of her delightful recipe that captures the essence of Australian baking, perfect for any Australia Day feast:

Ingredients

For the Sponge Cake:

  • 1 cup (250g) self-raising flour
  • 1 cup (220g) caster sugar
  • 1/2 cup (125ml) milk
  • 1/2 cup (125g) unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract

For the Chocolate Icing:

  • 2 cups (320g) icing sugar, sifted
  • 1/4 cup (25g) cocoa powder, sifted
  • 1/2 cup (125ml) milk
  • 1 tablespoon unsalted butter, melted

For Coating:

  • 2 cups (200g) desiccated coconut
  • Strawberry jam (optional, for filling)

Instructions

  1. Prepare the Sponge Cake:
    • Preheat your oven to 180°C (350°F). Grease and line a square baking pan (about 20cm x 20cm).
    • In a large bowl, cream the softened butter and caster sugar until light and fluffy.
    • Add the eggs one at a time, mixing well after each addition.
    • Stir in the vanilla extract.
    • Gradually fold in the self-raising flour and milk until just combined.
    • Pour the batter into the prepared pan and smooth the top.
    • Bake for 25-30 minutes or until a skewer inserted into the centre comes out clean.
    • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  2. Make the Chocolate Icing:
    • In a bowl, combine the sifted icing sugar and cocoa powder.
    • Gradually add the milk and melted butter, mixing until smooth and glossy.
  3. Assemble the Lamingtons:
    • Once the sponge cake is cool, cut it into squares (about 5cm x 5cm).
    • If desired, slice each square in half and spread a layer of strawberry jam before reassembling.
    • Dip each square into the chocolate icing, allowing any excess to drip off.
    • Roll the chocolate-coated cake in desiccated coconut until fully covered.
